Since I have had my second daughter my weight has definitely been an issue. The one thing that I have noticed is that my body type doesn’t like carbs very much. I started a very strict low-carb diet but just to be real, it’s not realistic for me to eat that perfectly all the time. I don’t really diet but there are still some low carb meals that I love and I don’t feel guilty after eating.!

Shtuff we will need…….
- 2 Chicken breasts cut into cubes
- Taco seasoning
- Sour cream
- Shredded Cheese
- Bell Peppers, diced (optional)
- Lettuce (optional)
- 1 tbs Olive oil
- Heat skillet with olive oil on medium
- Add chicken
- Sprinkle enough taco seasoning to cover the chicken (Money Saver!!!!!!)
- Mix chicken and seasoning and cook until chicken is done
- Put the chicken in your bowls
- Add toppings
It is seriously that easy! They do sell low carb tortillas so that is an option as well. I also like to mix up this recipe depending on what ingredients i have. I have used chicken thighs and even a rotisserie chicken. As long as you heat up the chicken and add your seasonings and choice of toppings, you will have the perfect chicken bowl.
If you aren’t really worried about the carbs, like my fiance, you can upgrade it to a chipotle bowl or burrito. All you have to do is add some beans and rice. I like black beans and cilantro lime rice with it every now and then.
